No Sugar, Low Fat Lunchbox Banana Loaf

This great little recipe is low in fat and has no added sugar since the bananas, dried fruit and orange juice contain all the sweetness you need.

Made with whole wheat flour instead of refined white flour, it is not only delicious but healthy too. Perfect for lunch boxes and after school snacks, it can also be enjoyed with a cuppa for the adults!

Wheat is made of 3 parts: Bran which is packed with fibre, Endosperm which contains starch, and the Germ, which is nutrient rich. During the refining process to make white flour, the Bran and Germ are removed leaving just the starchy part, greatly reducing the range of nutrients.

Try to use whole-wheat flour in your baking more often to get some extra nutrients into the family diet. Switching to 50/50 bread is a good choice for children as they won't realise that they are eating healthy nutrient rich wholemeal in their sandwiches.

Cook : 1 Hr

This loaf can be frozen or stored for 1 week in an airtight tin.


60 ml Vegetable oil

200g Whole-wheat flour (not bread flour)

3-4 very ripe bananas - mashed

50 ml Orange Juice

150g sultanas or dried fruit of choice

2 tsp Cinnamon powder

2 tsp Vanilla Extract

½ tsp Baking powder

2 eggs – beaten.


Grease and line a loaf tin. Heat oven to 160° fan.

Sift the flour, Baking powder, and Cinnamon into a bowl.

In a separate bowl combine the oil, orange juice, vanilla and eggs.

Fold the dry mix into the wet and mix.

Add the mashed bananas and sultanas and mix.

Pour into the tin and bake for around 1 hour, until skewer comes out clean.

Remove and allow to cool for 5 mins in the tin.

Remove from pan and allow to cool completely

Slice and enjoy!! YUM!!
